Not illustrated. 1903 Excerpt: ...had such an important influence in developing the modern sugar industry as has the centrifugal machine. It was not intioduced into the Atlantic coast sugar industry until shortly before the civil war, and during the decade 186070, the more conservative sugar refiners repudiated the use of this machine as being a labcr and time saving device unworthy of their consideration, because of the presumed inferiority of the product obtained from it. At present we presume that 95 per cent of the sugar of the commercial world is purged of its molasses by the use of centrifugal machines. Mr. H. M. Whitney, the well known and able editor of the Planters Monthly of Honolulu gives an account of how the industrial application of this machine originated, and in this Mr. Whitney was himself a participator. It has long been stated in our technical journals that centrifugals were first applied to the drying of clothes in laundries, but we are now favored with more details than we have hitherto had. Mr. D. M. Weston, a Bostonian, was an engineer and machinist in Honolulu in 1852-54. His shop was located in a flour mill, and happening one day to throw a wet cloth on a rapidly revolving wheel, he was much struck when, on taking it off a few minutes later, to find it quite dry. He at once connected the effect with the cause with true Yankee perspicacity, and in order to test it, he filled a bag with soaking sawdust and placed it on the wheel. In a few minutes this was taken off and the bag and contents found to be quite dry. This was done in the presence of several gentlemen, including Mr. Whitney.
